How to make fettuccine carbonara

January 30, 2015

Everyone should have a go-to pasta dish for any occasion. Is there anything more comforting than a bowl of Italian goodness? Whether you're hosting some dinner guests, or trying to make lunch for the week, it's the perfect quick and easy meal to throw together.

Get started by gathering your ingredients. Vegetarians can love this dish too; all they have to do is eliminate the bacon. Here's what you'll need:

  • 12 ounces fettuccine
  • 10 strips of bacon
  • 1 bag of green beans
  • 3/4 cup parmesan cheese
  • 1 clove garlic
  • 3 whole eggs
  • 1/2 cup sliced mushrooms
  • salt and pepper
  • olive oil

Once you have everything you need, preparation won't take much time at all. Put the green beans, sliced mushrooms, a tablespoon of olive oil and a few shakes of salt and pepper into a covered plastic container. Put the lid on and shake the container up and down for about 15 seconds so you coat the veggies in an even amount of olive oil, salt and pepper. Next, pour the components onto a baking tray and pop them in the oven at 400 degrees Fahrenheit. Cook the veggies for about 20 minutes, or until the green beans get a nice crispy outer layer.

While you're waiting for that to finish, get started on the next task. Mince the garlic and put it with two tablespoons of olive oil into a saucepan and heat on low. Let it simmer for no more than five minutes. Dice the bacon into bits and toss them into a sauce pan, as well. Cook on medium for about 10 minutes, or until the pork gets crunchy.

While the garlic and bacon are cooking, bring a pot of water to a boil and then toss in the fettuccine. Stir occasionally, remove from stove top and drain once the noodles are ready. Be sure to set aside a 1/2 cup of the water so you can use it in the upcoming preparation.

Assuming all three of the aforementioned steps are complete, whisk three eggs in a bowl and add in the roasted mushrooms and green beans. Pour that mixture into the saucepan with the bacon, add the fettuccine noodles and 1/2 cup of reserved water, and cook on medium.

Continue to stir all of the ingredients while they simmer for about five minutes or until the water evaporates. Then, remove from the stove top, sprinkle on the parmesan cheese and serve it up. Store the leftovers in plastic containers and put them in the fridge. Reheat the meal in the microwave when you're ready to eat it.
